In a quiet side valley in St. Sebastian lies the Lurgbauer, a family-run culinary establishment of Styria that is wholly dedicated to the rare cattle breed Aberdeen Angus. The animals are at the center – their meat forms the heart of the kitchen, their manure serves as fertilizer, and their hides adorn the dining room. A natural cycle, in which animal, human, and nature are in harmony.
“With my dishes, I want to present a clear message on the plate, not get lost in flavor combinations, and not overwhelm the guest.” Chef Max Leodolter serves clear, honest dishes in his restaurant, which has been awarded 3 toques. The focus is on high-quality meat from the farm's Angus bulls and pasture-raised veal, creatively interpreted based on traditional Austrian beef cuisine. What's processed comes from the farm, the raised beds, and the surrounding nature – complemented by products from small, regional producers from the Mariazell region. This is the unmistakable signature of Lurgbauer cuisine.
In addition to three toques from Gault&Millau and a Green Michelin Star, the Lurgbauer is also a member of JRE Austria, an association of top chefs united by their passion for European cuisine, regional products, and culinary traditions.
Culinary tip: A relaxed start to Sunday. At Lurgbauer, it begins with breakfast in the midst of nature and in the cozy atmosphere of the family-run business. Regional specialties, homemade delights, and lots of warmth are served.
